John Bishop's New Cookbook 'Fresh' Is All About Buying Local Food

By buying food from local food producers you are bypassing all of the excess carbon emissions that it takes for imported food to arrive on local store shelves, additionally you are also putting your money into the pockets of local food growers, supporting their families and their businesses which in turn helps our local economy stay diverse and healthy.

Vancouver restauranteur and chef John Bishop recently released his third cookbook entitled 'Fresh: Seasonal Recipes', and it is a collection of 100 recipes that specifically takes into account the best local ingredients that are available in the pacific northwest, combined with seasonal recipes that maximize the diversity of our local food selection. Of course, you can sample John Bishop's cooking in his lovely restaurant at 2183 West 4th in Kits, or keep your eye out for this fabulous new cookbook.

A veritable "cook’s tour" of the very best seasonal cooking inspired by fresh ingredients from local farms, forests and oceans and prepared by the award-winning chefs of Bishop’s Restaurant.

Restaurateur John Bishop and chef Dennis Green are justifiably renowned for their insistence on organically grown, locally sourced produce and sustainable seafood. Their menus reflect the seasons and the local bounty, from Fanny Bay oysters to Fraser Valley lamb, Okanagan peaches to Cascade Mountain chanterelles.

Fresh brings together more than 100 of John Bishop and Dennis Green’s award-winning recipes and some of the stories behind the ingredients. Sumptuously illustrated, it is an exquisite homage to local, sustainable food and the committed growers who raise it.

One of the city's best places to buy local food is the Farmer's Market at Trout Lake (just off Commercial Drive). The Trout Lake market is open every Saturday until Thanksgiving and it is a wonderful family experience. Bring your kids, go for a nice walk around the park, and browse through the wonderful tastes and smells of an amazing collection of local food vendors.
